Description
Cows’ milk cheese from the Ile-de-France, Brie de Meaux is probably the strongest of all soft white cheeses. The aroma should be of mould, damp leaves and mushrooms, becoming more intense with age. At its peak it has rich, condensed nutty, fruity flavour and the paste will be a glossy pale straw to butter-yellow colour with a soft interior and a thin rind of white mould with red patches and lines.
